Summer Weddings

It’s been a busy time lately, and I’m just back from an amazing wedding which we did in Ashford Castle. Luckily we had fantastic weather as the ceremony was outside in the grounds! I’m attaching some images for you to have a look at…..also some images from another wedding up in Ashford earlier in the year!

First of all a huge thank you to all of Fermoy town for their tremendous support over the past few weeks that I have been involved in Celebrity Banisteoir. It certainly was an amazing experience and I cannot thank you all enough for your encouragement and participation. I was really proud of the team and felt that we all gave 100%. I wish the team all the very best in their future playing career!
Back to the day job! I’ve just finished an amazing wedding in Ashford Castle for a wonderful couple. I’ll post some images of this on my next blog so be sure to have a look!

Last weekend I took my team - Fermoy - to Courtmacsherry for a boot camp training session! The flags were out and the support for them was fantastic. Despite the torrential rain, we had a great weekend - plenty of training and laughs! We are getting ready for our first match on 31st July when Dublin come to Fermoy…
One minute a wedding planner the next a Banisteoir! Life is certainly not dull!!

Started filming for Celebrity Banisteoir last week and I am really enjoying the challenge! It’s a complete contrast to my day job as a wedding planner – but I’m really enjoying the training with the team.
I’ll keep you posted on filming days and look forward to getting your support!

Sex and the City really pushed the Cosmopolitan to the top of the cocktail list Internationally.

The cosmopolitan is usually served in a large cocktail glass, also called a martini glass. sometimes mistakenly categorized as a type of martini.
Mix 2 parts lemon vodka to one part triple sec combined with one part cranberry and the juice of half a lime. Cointreau or other high-quality triple sec provides a cleaner taste than cheaper triple sec, and is generally substituted in the cosmopolitan. The cranberry mainly adds colour and should not excessively dilute the drink.
A lime wedge is always used to garnish. Traditionally a coin sized piece of orange should be “flamed” across the top of the drink. This coats the drink with a slick of citrus oil. Yum!!
I Think designing one or two signature drinks for your Wedding is a great idea and can also bring in your colour palette to your Drinks Reception.
My favorite Cocktail thou has always been a really fresh Mohito!!
I had a fantastic breakfast with the children this morning pancakes were being tossed to the ceiling. I designed a fantastic new pancake great for weddings. Being a chef the kids are always pushing me for new food creations. Go on and enjoy your pancake Tuesday.

We had a fantastic dinner party in Fishy Fishy last night in kinsale for my parents 45th Wedding Anniversary. The food and service was wonderful as usual My parents seem to be getting younger as I get older.
